And again: common sense is a good guideline in life!
From a medical point of view some chemicals in the "ultra processed foods" may in themselves be a problem: causing inflammation, interacting with hormonal pathways or whatever. But I am not aware of any studies / data that describe what percentage of "harm" is done by the chemicals themselves and how much is pure excess. But again common sense dictates that excess is the major problem and focusing on some not-so-relevant interactions distracts us from finding a real solution!
One could also put it like that: if one has successfully managed the "excess part" and there are still weight / health issues it's worth diving into more details on the biochemical level. But the latter without the former is not going to solve the problem...

Good point, Stefan -- you are absolutely right. I am sure there is nasty stuff in that 58% (or whatever) covered by the category of UPFs. I didn't mean to suggest there isn't -- just that 58% doesn't really narrow anything down sufficiently to help find it.
