Eat Like an Italian

thank you for this very interesting article. Living in Switzerland, Italy is our nextdoor neighbor. The health conscious Europeans, some of them are, have been gleaning from the traditional Italian food culture for a long time. DH and I love simple and healthy Italian meals. For example, for lunch I often prepare a simple dish of whole-wheat pasta with simmered onions, garlic, and eggplants/tomatoes/zucchini/champignons...with a little shredded Padano (lower-fat hard cheese), fresh herbs, and no meat. This is filling and satisfying. I can only encourage everyone to eat more Italian foods, the old simple way, that is.

When I think back on it, it was amazing how much meat was available in even the third world countries I visited back in the '70's. You'd think vegetarian foods would have been the norm with meat as a garnish, but they weren't, at least not in restaurants. India had the most vegetarian variety, but even then, the meat parts of the menu were longer by far in most restaurants except in the simplest places.
