Thanks! I did have fun and I did do pretty ok with food. My travel day there was green. Dinner options were incredibly limited, but I did the best I could and kept to vanilla no-s. I pushed myself to do my exercise and am so glad for it. I'm feeling so much better. In addition to my little 15 minute earlier walk I did 15 minutes upper body work and 18 pushing hard on the exercise bike. Is planned 15, but when I hit that I thought I could do a few more minutes so I did.

Cashew butter is super fast and easy to make with a food processor. You just throw in cashews, a tablespoon or so of oil, a touch of sugar, and a touch of salt (if you want, I do), grind it up and you're done. It's made with olive oil and lemon juice rather than the heavier traditional pad thai sauce. They have it at Gecko Gecko and it's really quite tasty.
